Cowboy Butter Lobster Tails

Ingredients:

4 lobster tails
1/2 cup unsalted butter, softened
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 teaspoon Dijon mustard
Juice of 1/2 a lemon
1/2 teaspoon red pepper flakes
Salt and black pepper to taste

Directions:

Prepare the lobster tails:
Preheat your grill or oven to 450°F (230°C).
Using kitchen shears, cut through the top shell of each lobster tail lengthwise. Carefully pull apart the shells and lift the tail meat, leaving it attached at the end. Rest the meat on top of the shells.
Make the cowboy butter:
In a bowl, combine the softened butter, minced garlic, parsley, chives, Dijon mustard, lemon juice, red pepper flakes, salt, and black pepper. Mix until well blended.
Cook the lobster tails:
Place the prepared lobster tails on a baking sheet or directly on the grill. Spread a generous amount of cowboy butter over the meat of each lobster tail.
Cook in the oven or on the grill for about 10-12 minutes, or until the lobster meat is opaque and cooked through.
Serving:
Serve the lobster tails immediately, garnished with additional parsley and a wedge of lemon if desired.
