Ingredients:
2 tablespoons olive oil
1 onion, diced
1 pound ground beef
1 clove garlic, minced
1 teaspoon salt
½ teaspoon pepper
1 packet taco seasoning
¾ cup water
1 cup sour cream
2 cups shredded cheddar cheese, divided
1 (32-ounce) package frozen tater tots
1 (14-ounce) can diced green chiles
Directions:
Start the Base:
Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and sauté until it softens, about 5 minutes.
Add the ground beef, minced garlic, salt, and pepper. Continue to cook, stirring and breaking up the meat, until the beef is nicely browned, about 5 more minutes.
Season the Beef:
