Ingredients:—
4 large russet potatoes, thinly sliced
4 cups cold water
2 tbsp white vinegar
1/4 cup salt (for soaking)
1/2 tsp salt (for seasoning)
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp black pepper
4 cups vegetable oil (for frying)
Directions:——
Prepare the potatoes: Using a mandoline or a sharp knife, thinly slice the potatoes. Place the slices in a large bowl of cold water mixed with the vinegar and 1/4 cup of salt. Let soak for 30 minutes to remove excess starch.
Drain and dry: Drain the potato slices and rinse under cold water. Pat them dry thoroughly with paper towels to prevent splattering during frying.
Heat the oil: In a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a kitchen thermometer to maintain a consistent temperature.
Fry the chips: Working in batches, carefully add the potato slices to the hot oil, ensuring they are not overcrowded. Fry until golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to transfer the chips to a paper towel-lined baking sheet to drain excess oil.
Season the chips: While the chips are still hot, sprinkle with the remaining 1/2 tsp salt, garlic powder, paprika, and black pepper. Toss gently to coat evenly.
Serve: Transfer the seasoned chips to a serving bowl and enjoy immediately, or store in an airtight container for up to a day.
