Indulge in the Sweet Delights of Sweet Potato Cheesecake
Ingredients:
- 2 cups graham cracker crumbs
- 1/4 cup melted butter
- 1 (15 ounce) can sweet potato puree
- 1 (8 ounce) package of cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup sour cream
Directions:
- Preheat oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat the sweet potato puree, cream cheese, sugar, cinnamon, nutmeg, and salt until smooth.
- Beat in the eggs one at a time, then stir in the sour cream.
- Pour the cheesecake filling over the graham cracker crust.
- Bake for 50-60 minutes, or until the center is set.
- Let cool completely before serving.
