Elegant Lemon Marbled Cheesecake Bars
Ingredients:
For the Crust:
1 1/2 cups crushed graham crackers
1/4 cup sugar
1/3 cup unsalted butter, melted
For the Cheesecake:
16 oz cream cheese, softened
2/3 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon lemon zest
1/4 cup lemon juice
For the Lemon Swirl:
1/4 cup lemon curd
Instructions:
Preheat oven to 325°F (163°C). Grease an 8×8 inch baking dish.
Mix graham crackers, sugar, and melted butter. Press into the baking dish.
Bake for 10 minutes. Let cool.
Beat cream cheese and sugar until smooth. Add eggs, vanilla, lemon zest, and juice. Pour over crust.
Spoon lemon curd over the cheesecake. Swirl with a toothpick.
Bake for 35-40 minutes. Cool and refrigerate for at least 3 hours.
