2 tbsp olive oil
1 lb (450 g) small potatoes, washed and cut into bite-sized pieces
1 tsp salt
1 tsp garlic powder
1 tsp paprika
1/2 tsp black pepper
Fresh parsley, chopped (optional, for garnish)

Preheat the Oven:
Preheat your oven to 450°F (230°C).
Prepare the Potatoes:
Place the cut potatoes in a microwave-safe bowl. Add a little water, cover with a microwave-safe lid or plastic wrap, and microwave on high for 5-7 minutes until slightly tender but not fully cooked.
Season the Potatoes:
Drain the water from the potatoes and pat them dry. Transfer them to a large bowl and toss with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
Roast the Potatoes:
Spread the seasoned potatoes in a single layer on a baking sheet. Make sure they are not overcrowded, as this will ensure they get crispy.
Bake:
Roast in the preheated oven for 15-20 minutes, flipping halfway through, until golden brown and crispy on the outside.
Serve:
Remove from the oven and let cool slightly. Garnish with chopped fresh parsley, if desired, and serve immediately.
