Swedish Cheese Pie (Västerbottenostpaj)
Ingredients:
For the Crust:
- 125 grams butter, chilled (about 1/2 cup)
- 1 cup flour
- 1 tablespoon cold water
For the Filling: - 3 cups Gruyere or Västerbottenost, grated
- 3 large eggs
- 200 ml cream (about 3/4 cups + 2 tablespoons)
- Dash of ground pepper
Directions:
- Prepare the Crust:
o Preheat your oven to 400°F (200°C).
o In a mixing bowl, combine the chilled butter and flour. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
o Add the cold water and mix just until the dough comes together. If necessary, add a little more water, a teaspoon at a time.
o Form the dough into a ball, then press it evenly into the bottom and up the sides of a 9-inch (23 cm) pie or tart pan. Use a fork to prick the bottom of the crust.
o Bake the crust in the preheated oven for about 10-12 minutes, or until it is lightly golden. Remove from the oven and set aside. - Prepare the Filling:
o In a large bowl, whisk together the eggs and cream until well combined.
o Stir in the grated Gruyere or Västerbottenost cheese and a dash of ground pepper. - Assemble the Pie:
o Pour the cheese filling into the pre-baked crust, spreading it out evenly.
o Reduce the oven temperature to 350°F (175°C).
o Bake the pie for 25-30 minutes, or until the filling is set and the top is golden brown. - Cool and Serve:
o Allow the Västerbottenostpaj to cool slightly before slicing.
o Serve warm or at room temperature, either as a main dish or as part of a traditional Swedish smorgasbord.
