Cinnamon Sugar Apple Empanadas

Ingredients:
◦ 2 cups all-purpose flour
◦ 1 teaspoon salt
◦ 1/4 cup granulated sugar
◦ 1/2 cup unsalted butter, chilled and cut into small pieces
◦ 1 large egg, beaten
• Filling:
◦ 2-3 apples, peeled and sliced
◦ 1/2 cup granulated sugar
◦ 1 tablespoon cinnamon
◦ 1/4 teaspoon nutmeg
• Cinnamon Sugar:
◦ 2 tablespoons granulated sugar
◦ 1 teaspoon ground cinnamon
Instructions:
1. Preheat oven to 375°F (190°C).
2. Prepare Dough:
◦ In a large bowl, whisk together flour, salt, and sugar.
◦ Add cold butter and use a pastry blender or fingers to work into flour mixture until crumbly.
◦ Gradually add beaten egg, mixing until dough comes together.
◦ Divide dough into 8-10 equal pieces.
3. Prepare Filling:
◦ In a separate bowl, mix together sliced apples, granulated sugar, cinnamon, and nutmeg.
4. Assemble Empanadas:
◦ Roll out each dough piece into a thin circle.
◦ Place a tablespoon of apple filling in the center of each circle.
◦ Fold dough over filling, forming a half-moon shape, and press edges to seal.
5. Bake and Coat with Cinnamon Sugar:
◦ Place empanadas on a baking sheet lined with parchment paper.
◦ Brush tops with beaten egg and sprinkle with cinnamon sugar mixture.
◦ Bake for 20-25 minutes, or until golden brown.
