Ingredients:

1 cup Oil

3 large Eggs

1 1/3 cups Buttermilk

2 cups Sugar

1 Tablespoon Lemon Zest

1 Tablespoon Orange Zest

1 teaspoon Lime Zest

1 Tablespoon Lemon Juice

1 Tablespoon Orange Juice

2 cups Flour

1 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1 teaspoon Salt

Citrus Cream Cheese Frosting:

1/2 cup Butter softened

1 8-ounce pkg. Cream Cheese softened

5 cups Powdered Sugar

Orange, Lemon, Lime Zest

Sliced Citrus to place on top of the cake

Instructions:

1 Preheat oven to 350F. In a large mixing bowl, cream together oil, eggs, buttermilk, sugar, lemon zest, orange zest, lime zest, lemon juice, and orange juice for 2-3 minutes.

2 Fold in flour, baking powder, baking soda, and salt.

3 Line a 9×13 aluminum baking pan with parchment paper and spray with non-stick cooking spray. Pour the batter into the pan and spread evenly.

4 Bake for 27-33 minutes or until a toothpick comes out clean. Let cool.

5 For the frosting, cream together butter and cream cheese until light and fluffy, about 3-4 minutes. Add powdered sugar and citrus zest, and mix well.

6 Frost the cooled cake and top with sliced citrus. Cut into squares and serve.

Notes :

Using parchment paper ensures easy removal of the cake from the pan.

Garnish with extra citrus slices for a beautiful presentation.
