Bacon Jalapeño Popper Eggrolls
Ingredients:

7-8 eggroll wrappers
8 oz cream cheese, softened
1 cup shredded cheddar cheese
5 slices bacon, chopped and cooked
2 jalapeños, diced
1/4 tsp pepper
1/4 tsp salt
1 tsp garlic powder
1/2 tsp onion powder
Oil for frying

Instructions:

In a bowl, mix together softened cream cheese, shredded cheddar, cooked bacon, diced jalapeños, salt, pepper, onion powder, and garlic powder.
Lay an eggroll wrapper flat and place a scoop of the filling in the center.
Wet the outer edges of the wrapper with water.
With one corner facing you, fold the side corners inward, then roll the corner closest to you inward, ensuring the eggroll is completely sealed.
Repeat the process with the remaining wrappers and filling.
Heat about 1 inch of oil to 350°F (175°C).
Fry eggrolls on each side for about 1-2 minutes until golden brown.
Serve with your favorite dipping sauce.
