Cauliflower Salad 🥗🌿

Ingredients:

1 large head of cauliflower, cut into florets

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

½ cup bell pepper, diced (any color)

½ cup black olives, sliced

½ cup feta cheese, crumbled (optional)

¼ cup fresh parsley, chopped

For the Dressing:

¼ cup olive oil

2 tbsp red wine vinegar (or lemon juice)

1 tsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Instructions:

Prepare the Cauliflower:

Bring a large pot of salted water to a boil. Add the cauliflower florets and blanch for 3-4 minutes until slightly tender but still crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

Mix the Salad:

In a large mixing bowl, combine the blanched cauliflower, cherry tomatoes, red onion, bell pepper, black olives, feta cheese (if using), and parsley.

Make the Dressing:

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.

Combine and Serve:

Pour the dressing over the salad and toss gently to combine.

Let the salad sit for about 10-15 minutes to allow the flavors to meld before serving.
