Gooey Caramel Apple Muffins 🧡🍏🧁

Ingredients:

– 1 ½ cups all-purpose flour

– 1 teaspoon baking powder

– ½ teaspoon baking soda

– ½ teaspoon salt

– 1 teaspoon cinnamon

– ½ teaspoon nutmeg

– ½ cup unsalted butter, melted

– ¾ cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– ½ cup buttermilk

– 1 ½ cups diced apples (such as Granny Smith)

– ½ cup caramel sauce (store-bought or homemade)

Directions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In a separate large bowl, whisk the melted butter and sugar until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.

5. Gently fold in the diced apples.

6. Divide the batter evenly among the muffin cups, filling each about ¾ full.

7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

9. Once cooled, drizzle the muffins with caramel sauce before serving.
