Tzatziki Chicken Salad π₯
Ingredients:
1 medium cucumber, finely grated π₯
ΒΎ cup plain Greek yogurt π₯
2 tablespoons chopped fresh dill πΏ
1 tablespoon lemon juice π
1 clove garlic, minced π§
Β½ teaspoon salt π§
ΒΌ teaspoon pepper π§
1 cooked rotisserie chicken π
Β½ red onion, diced π§
Instructions:
Prepare the Cucumber:
Wrap the grated cucumber in a paper towel (or a tea towel) and gently squeeze to remove excess moisture. π§Ό
Make the Tzatziki Sauce:
In a bowl, combine the grated cucumber with Greek yogurt, dill, lemon juice, minced garlic, salt, and pepper. Stir until well combined. π₯£
Add the Chicken and Onion:
Shred the rotisserie chicken into small, bite-size pieces and add to the tzatziki sauce along with the diced red onion. Toss until the chicken is evenly coated with the sauce. π
