Ingredients:

1 lb ground beef or lamb
1 tbsp olive oil
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups beef broth
2 cups potatoes, peeled and diced
1 cup frozen peas
1 cup frozen corn
1 tbsp tomato paste
1 tsp Worcestershire sauce
1/2 tsp dried thyme
1/2 tsp smoked paprika
Salt and pepper to taste
1 cup heavy cream or half-and-half
1/2 cup shredded cheddar cheese (optional, for garnish)

Instructions:

Cook the Meat:

In a large pot, heat olive oil over medium heat. Add the ground beef or lamb and cook until browned. Drain excess fat and set aside.
Sauté the Vegetables:

In the same pot, sauté the onion, carrots, and celery until softened, about 5 minutes. Add the garlic and cook for another minute.
Add the Broth & Potatoes:

Stir in the tomato paste, Worcestershire sauce, thyme, paprika, and cooked meat. Pour in the beef broth and add the diced potatoes. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are tender.
Add the Peas & Corn:

Stir in the frozen peas and corn, cooking for an additional 5 minutes.
Finish with Cream:

Stir in the heavy cream or half-and-half for a creamy texture. Taste and adjust the seasoning with salt and pepper.
Serve & Garnish:

Ladle the soup into bowls, and if desired, sprinkle with shredded cheddar cheese for a melty topping.
