Ingredients


2 cups pecan halves, lightly toasted


1 cup caramel bits or soft caramel candies (unwrapped)


2 tbsp heavy cream


2 cups semi-sweet or milk chocolate chips


1 tsp coconut oil or vegetable shortening (optional, for smoother chocolate)


Directions

  1. Toast the Pecans:
    Preheat oven to 350°F (175°C).
    Spread the pecan halves on a baking sheet and toast for 6-8 minutes until fragrant. Let cool.
  2. Prepare the Caramel:
    In a microwave-safe bowl, combine caramel bits and heavy cream.
    Microwave in 30-second intervals, stirring between, until the mixture is smooth and melted.
  3. Form the Clusters:
    Line a baking sheet with parchment or wax paper.
    Arrange small piles of 4-5 pecans each on the sheet.
    Spoon about a teaspoon of caramel over the pecans, ensuring they stick together. Let the caramel set for about 10 minutes.
  4. Coat with Chocolate:
    Melt chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
    Dip or spoon melted chocolate over the caramel-coated pecans, covering them completely.
    Tap the baking sheet gently to smooth the chocolate.
  5. Chill and Serve:
    Place the baking sheet in the refrigerator for 20-30 minutes until the chocolate is set.
    Once hardened, transfer the clusters to an airtight container.
    Tips:
    Store pecan clusters in a cool, dry place or refrigerate for up to 2 weeks.
