🛒 Ingredients:
1 lb large shrimp, peeled and deveined 2 cups baby potatoes, halved 1 cup fresh green beans, trimmed 1 red bell pepper, sliced 2 tbsp olive oil 2 tbsp Cajun seasoning 1/2 tsp garlic powder 1/2 tsp smoked paprika Salt and pepper to taste 1 lemon, sliced (optional, for serving) Fresh parsley, chopped (for garnish)
👩🍳 Directions:
1️⃣ Preheat oven: Set to 400°F (200°C) and line a large baking sheet with parchment paper.
2️⃣ Prep the veggies: Toss potatoes, green beans, and bell pepper with 1 tbsp olive oil, 1 tbsp Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Spread on the baking sheet and roast for 15 minutes.
3️⃣ Season the shrimp: In a bowl, toss shrimp with the remaining olive oil and Cajun seasoning.
4️⃣ Add shrimp to the pan: Remove the baking sheet from the oven, push the veggies to the side, and place shrimp in a single layer. Roast for an additional 8-10 minutes, or until shrimp are pink and cooked through.
