One-Pot Garlic Chicken with Parmesan Penne

One-Pot Garlic Chicken with Parmesan Penne

Ingredients:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon Italian seasoning
4 cups chicken broth
12 ounces penne pasta
1 cup heavy cream
1 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)

Directions:

Cook the Chicken: Season the chicken pieces with salt and pepper. In a large pot or skillet, heat the olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
Sauté Garlic: In the same pot, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
Add Broth and Pasta: Pour in the chicken broth and bring to a simmer. Add the penne pasta and cook according to package instructions, usually about 11-12 minutes, stirring occasionally until the pasta is al dente.
Combine Ingredients: Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese, mixing until the cheese is melted and the sauce is creamy. Add the cooked chicken back into the pot and stir until everything is well combined.
Garnish and Serve: Serve hot, garnished with chopped fresh parsley for a pop of color and flavor.
