Philly Cheesesteak Meatloaf

Ingredients:
Meatloaf:
2 lbs ground beef
1 onion, finely chopped
1 green bell pepper, diced
3 garlic cloves, minced
1 cup panko breadcrumbs
2 eggs
1 tsp Worcestershire sauce
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper

Philly Cheesesteak Filling:
8 oz provolone cheese, sliced
8 oz sliced mushrooms
1 onion, thinly sliced
1 green bell pepper, thinly sliced

Instructions:

Preheat oven to 375°F (190°C). Grease a 9×5 inch loaf pan.
In a large bowl, combine all the meatloaf ingredients until just mixed together, being careful not to overmix.
Spread half the meatloaf mixture in the bottom of the prepared loaf pan, packing it down firmly.
Arrange the provolone cheese slices in an even layer over the meatloaf base. Top with the sliced mushrooms, onions, and bell peppers.
Top with the remaining meatloaf mixture, pressing it down to fully encase the filling.
Bake for 55-60 minutes, until the meatloaf is cooked through and the internal temperature reaches 165°F (75°C).
Allow the meatloaf to rest for 10 minutes before slicing and serving.
