Ingredients
For the Rolls:

2 packs Pillsbury Grands cinnamon rolls (5 count each, not the 8 count)
Butter, for greasing the muffin tin
For the Apple Pie Filling:

4 large apples (2 Honeycrisp, 2 Granny Smith), peeled, cored, and diced into 1-inch pieces
1/3 cup brown sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
1/4 cup melted butter
2 tablespoons cornstarch dissolved in 3 tablespoons water
For the Streusel Topping:

5 tablespoons butter, partially melted
1/2 cup all-purpose flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
For the Cinnamon Buttery Icing:

1/4 cup melted butter
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
1/2–1 teaspoon cinnamon (based on preference)
Directions
1. Prepare the Muffin Tin:
Preheat your oven to 400°F (200°C). Grease each muffin cup generously with softened butter.
Press one cinnamon roll into each muffin cup, shaping the dough up the sides to create a cavity for the apple filling.
2. Make the Apple Pie Filling:
In a medium bowl, combine the diced apples, brown sugar, cinnamon, lemon juice, and melted butter. Mix well.
Transfer the apple mixture to a saucepan and cook over medium heat for 5–7 minutes, until the apples soften and release their juices.
Stir in the cornstarch slurry and cook for an additional 1–2 minutes, until the mixture thickens. Remove from heat.
3. Fill the Rolls:
Use a slotted spoon to add the apple filling to the cavities of each cinnamon roll, leaving behind excess liquid.
4. Add the Streusel Topping:
In a small bowl, combine the streusel topping ingredients (partially melted butter, flour, brown sugar, and cinnamon) and mix with a fork until crumbly.
Sprinkle the streusel topping evenly over the apple filling in each roll.
5. Bake the Rolls:
Place the muffin tin in the oven and bake for 15 minutes. Cover with foil for the first 5 minutes to prevent over-browning, and rotate the pan halfway through baking.
6. Make the Cinnamon Icing:
In a small bowl, whisk together the melted butter, powdered sugar, milk, vanilla extract, and cinnamon until smooth. Adjust the consistency with additional milk if needed.
7. Cool and Serve:
Allow the rolls to cool in the muffin tin for 5–10 minutes. Drizzle the cinnamon icing generously over the rolls before serving.

For extra flavor, toss the apple pie filling with a pinch of nutmeg or allspice.
Use parchment paper liners in the muffin tin for easier cleanup and serving.
