Ingredients:
2 cups mashed potatoes (preferably leftover or freshly made)
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup sour cream
2 tablespoons butter, melted
2 large eggs, beaten
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
1/4 cup breadcrumbs (for coating)
Fresh parsley, chopped (optional, for garnish)
Procedure:
Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or lightly butter the cups.
Prepare the Mixture: In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, melted butter, and beaten eggs. Add garlic powder, onion powder, salt, and pepper. Mix everything together until smooth and well combined.
Form the Puffs: Scoop spoonfuls of the mashed potato mixture into the muffin tin, filling each cup almost to the top. Use a spoon or your fingers to lightly press the mixture down.
Add a Crunchy Coating: Sprinkle breadcrumbs evenly over the top of each puff for a crispy crust.
