Chewy Apricot Almond Bars Recipe
Ingredients:
1 1/2 cups dried apricots
1 cup raw almonds
2 tablespoons honey (or maple syrup)
Instructions:
Prepare the Ingredients:
Roughly chop the dried apricots for easier blending.
Line an 8×8-inch baking pan with parchment paper for easy removal.
Blend the Mixture:
In a food processor, combine the dried apricots and almonds. Pulse until the mixture is finely chopped and starts to clump together.
Add the honey and blend again until the mixture holds together when pressed.
Press into the Pan:
Transfer the mixture to the prepared pan. Press it firmly and evenly into the pan using your hands or the back of a spoon.
Chill the Bars:
Refrigerate the pan for at least 1-2 hours, or until the mixture is firm enough to cut.
Cut and Serve:
Remove the mixture from the pan using the parchment paper. Slice into bars or squares.
Store:
Store the bars in an airtight container in the refrigerator for up to a week.
