Ingredients (for 4 people)


For the steak:


4 steaks (rib eye, filet or sirloin depending on your preference)
2 tablespoons olive oil
Salt and pepper, to taste
For the lemon and herb butter:
100 g unsalted butter, softened
1 clove garlic, finely chopped
1 tablespoon lemon juice
Zest of 1 lemon
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives or thyme, chopped
For the mashed potatoes:
1 kg potatoes
100 ml whole milk (or single cream for more richness)
50 g butter
Salt and pepper, to taste

Préparation


Step 1:

Prepare the lemon and herb butter
In a bowl, mix the butter softened, minced garlic, lemon juice and zest, and fresh herbs.
Season with a pinch of salt and pepper.
Roll the butter into a roll using cling film and refrigerate until ready to serve.


Step 2:

Make the mashed potatoes
Peel the potatoes and cut into equal pieces.
Cook in a large pan of boiling salted water until tender (about 15-20 minutes).
Drain, then mash with a potato masher or whisk.
Add the hot milk and butter, stirring until smooth and creamy. Season with salt and pepper.


Step 3:

Cook the steaks
Remove the steaks from the refrigerator 20 minutes before cooking to allow them to come to room temperature.
Heat the oil in a skillet over medium-high heat.


Season the steaks with salt and pepper, then cook them to your preference:


Rare: 2-3 minutes per side
Medium: 4-5 minutes per side
Well done: 6-7 minutes per side
Once cooked, let the steaks rest for 5 minutes under a sheet of aluminum foil.
