3-4 medium potatoes (Yukon Gold or red potatoes work best)
2 tbsp olive oil
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning (or dried parsley/thyme)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the oven:
Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
Prepare the potatoes:
Slice the potatoes into 1/4-inch thick rounds. Place them in a bowl, drizzle with olive oil, and toss to coat evenly.
