Spicy Cajun Shrimp Fried Rice 🍤🌶️ Riz
Ingredients
For the rice
2 cups of cold cooked rice (preferably rice cooked the day before)
300 grams of peeled shrimp
200 g smoked sausages (andouille type or chorizo), sliced
2 tablespoons of vegetable oil or olive oil
3 cloves of garlic, finely chopped.
1 onion, finely chopped
1 red pepper, cut into cubes
1 green pepper, cut into cubes
1 branch of celery, finely chopped
1/2 cup frozen peas
2 eggs, beaten
For the seasoning
2 tablespoons of Cajun seasoning (adjust according to your spice tolerance)
1/2 teaspoon of smoked paprika
1/4 teaspoon cayenne pepper (optional for an even spicier dish)
2 tablespoons of soy sauce
Salt and pepper to taste
1/4 cup chopped fresh chive
Instructions
Step 1:
Prepare the ingredients
Season the shrimp with 1 tablespoon of Cajun seasoning. Make your reservations.
In a large skillet or wok, heat the oil over medium-high heat.
Step 2:
Cooking the sausage and shrimp
Add the sausage slices to the skillet and stir until slightly golden brown. Take them out and book them
In the same pan, add the shrimp and cook for 2-3 minutes until pink and well cooked. Take them out and book them
Step 3:
Skip the vegetables
Add garlic, onion, red pepper, green pepper and celery to the skillet. Bring them back until they are tender and fragrant.
Add the peas and mix.
Step 4:
Add eggs and rice
Push the vegetables to one side of the pan and pour the scrambled eggs on the other side. Stir ’til they are stirred.
Place the cold cooked rice in the pan and mix well.
Step 5:
Season and mix
Add the sausage and shrimp reserved for the rice.
Sprinkle the rest of the Cajun seasoning, smoked paprika, cayenne pepper, and add soy sauce. Mix well to spread the flavors.
Simmer for 3-4 minutes, until well warm.
Step 6: Top and Serve
Taste and adjust the seasoning with salt and pepper if necessary.
Top with chopped chives before serving hot.
Advice
For an extra twist, serve with a lemon zest for a little tart, or add a pinch of chilli if you like extra spicy dishes.
