Ingredients:
1 1/2 cups all-purpose flour, 1/2 cup granulated sugar, 1/2 cup unsalted butter, softened, 1/4 cup brown sugar, 1/4 cup honey, 1 tsp vanilla extract, 1/2 tsp baking powder, 1/2 tsp salt, 1 cup finely chopped pistachios, 1 cup finely chopped walnuts, 1 cup cream cheese, softened, 1/4 cup powdered sugar, 1/4 cup caramel sauce.
Directions:
1. Preheat the oven to 350°F (175°C).
2. In a bowl, beat the butter, granulated sugar, and brown sugar until creamy.
3. Add in honey and vanilla extract, mixing well.
4. In a separate bowl, combine flour, baking powder, and salt. Gradually add to the butter mixture.
5. Fold in chopped pistachios and walnuts.
6. Drop tablespoon-sized balls of dough onto a baking sheet and bake for 10-12 minutes until lightly golden.
7. Allow cookies to cool.
8. For the filling, mix cream cheese and powdered sugar until smooth.
9. Spread the filling on the flat side of one cookie, sandwich with another cookie, and drizzle with caramel sauce.
