Ingredients:
For the Meatloaf:
- 1 lb ground beef (or ground turkey if preferred)
- 1 small onion, finely chopped
- 1 packet (1 oz) French onion soup mix
- 1 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
For the Topping:
- 1 cup shredded Swiss cheese
- 1/2 cup French onion soup (from a can or homemade)
Instructions:
- Prepare the Meatloaf:
- In a large bowl, combine ground beef (or turkey), finely chopped onion, French onion soup mix, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper.
- Mix everything together until well combined.
- Shape the Meatloaf:
- Transfer the meat mixture into a loaf pan that will fit inside your crockpot (usually 6 to 7 quart-sized ones). Alternatively, you can form the meat mixture into a loaf shape directly inside the crockpot.
- Cook the Meatloaf:
- Cover the crockpot and cook the meatloaf on low for 6 to 7 hours or high for 3 to 4 hours, depending on your crockpot’s heat settings. The meatloaf is done when the internal temperature reaches 160°F (71°C).
- Add the Topping:
- About 10 minutes before the meatloaf is done, pour the French onion soup (1/2 cup) over the top of the meatloaf and sprinkle the shredded Swiss cheese over the soup.
- Cover and let it cook for the remaining time, or until the cheese is melted and bubbly.
- Serve:
- Once done, remove the meatloaf from the crockpot carefully. Let it rest for a few minutes before slicing.
- Serve with your favorite sides, and enjoy the savory flavors of French onion and melted Swiss cheese!
Tips:
- You can also top the meatloaf with some caramelized onions if you want more flavor!
- If you don’t have a loaf pan, you can shape the meat into a loaf and place it directly in the crockpot, but the loaf pan helps the meatloaf hold its shape.
