Pear, Gorgonzola, and Walnut Flatbread

1 store-bought flatbread or pizza dough (or homemade, if preferred)
• 1 ripe but firm pear (e.g., Bosc or Anjou), thinly sliced
• ½ cup (60g) crumbled Gorgonzola cheese
• ½ cup (60g) chopped walnuts
• 2 cups (60g) arugula
• 2 tbsp olive oil
• 1 tbsp balsamic glaze (or balsamic vinegar)
• Salt and pepper, to taste

Instructions
1. Preheat the oven:
Preheat your oven to 400°F (200°C). If using pizza dough, pre-bake it for 5–7 minutes to firm it up slightly before adding toppings.
2. Assemble the flatbread:
Place the flatbread on a baking sheet. Brush the surface with 1 tablespoon of olive oil. Arrange the pear slices evenly over the flatbread, then sprinkle with crumbled Gorgonzola and chopped walnuts.
3. Bake:
Bake for 10–12 minutes, or until the cheese is melted, the walnuts are toasted, and the edges of the flatbread are golden brown.
4. Add arugula and glaze:
Remove the flatbread from the oven and top with fresh arugula. Drizzle with the remaining tablespoon of olive oil and the balsamic glaze. Season with salt and pepper to taste.
5. Slice and serve:
Cut into wedges and serve warm. Enjoy as an appetizer, lunch, or a light dinner with a glass of crisp white wine.
