Ingredients:
4 medium potatoes, peeled and shredded
1 small onion, finely chopped (optional)
1/2 cup shredded cheddar cheese (or your favorite)
1 egg
2 tablespoons all-purpose flour (helps bind)
Salt and pepper to taste
1/2 teaspoon garlic powder (optional)
1/4 cup chopped bell peppers or parsley (optional for color)
Cooking spray or a bit of oil
Instructions:
Preheat oven to 200°C (400°F).
Grate the potatoes , then place them in a clean towel and squeeze out excess water.
In a large bowl, mix :
Shredded potatoes
Onion
Cheese
Egg
Flour
Salt, pepper, garlic powder
Peppers or parsley if using
Spray or grease a muffin tin well.
Scoop the mixture into each muffin cup. Press it down gently to form a patty shape.
Bake for 25–30 minutes, or until golden and crispy on top.
Let cool for a few minutes, then gently remove from the tin.
Serve with sour cream, yogurt dip, or garlic sauce .
Tips:
You can replace potatoes with sweet potatoes or zucchini for variation.
Add cooked bacon bits or turkey for extra flavor.
