Potatoes with eggs


Ingredients:

  • 4 medium potatoes, peeled and shredded
  • 1 small onion, finely chopped (optional)
  • 1/2 cup shredded cheddar cheese (or your favorite)
  • 1 egg
  • 2 tablespoons all-purpose flour (helps bind)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 cup chopped bell peppers or parsley (optional for color)
  • Cooking spray or a bit of oil

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Grate the potatoes, then place them in a clean towel and squeeze out excess water.
  3. In a large bowl, mix:
  • Shredded potatoes
  • Onion
  • Cheese
  • Egg
  • Flour
  • Salt, pepper, garlic powder
  • Peppers or parsley if using
  1. Spray or grease a muffin tin well.
  2. Scoop the mixture into each muffin cup. Press it down gently to form a patty shape.
  3. Bake for 25–30 minutes, or until golden and crispy on top.
  4. Let cool for a few minutes, then gently remove from the tin.
  5. Serve with sour cream, yogurt dip, or garlic sauce.

Tips:

  • You can replace potatoes with sweet potatoes or zucchini for variation.
  • Add cooked bacon bits or turkey for extra flavor.
