Cajun Salmon Alfredo

Ingredients

2 salmon fillets

2 tablespoons Cajun seasoning

8 oz fettuccine pasta

1 tablespoon olive oil

2 cups heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and pepper to taste

Chopped parsley for garnish

Directions

1. Start by bringing a large pot of salted water to a boil and cook your fettuccine as the package suggests. Once it’s cooked to your liking, drain it and set it aside.

2. While the pasta is cooking, sprinkle the Cajun seasoning evenly over both sides of the salmon fillets.

3. Heat the olive oil in a large skillet over medium heat. Carefully lay the seasoned salmon in the pan, and let it cook for 4-5 minutes on each side, until done. Remove the salmon from the skillet and set it aside.

4. In the same skillet, add the minced garlic and sauté just until fragrant, about a minute.

5. Pour in the heavy cream and let it come to a gentle simmer. Whisk in the Parmesan cheese until the sauce is smooth and creamy.

6. Add your cooked fettuccine right into the sauce, giving everything a good toss to coat the noodles well.

7. Flake the cooked salmon into large pieces and gently mix it into the pasta. Taste and add a little salt and pepper if you like.

8. Serve everything up warm, and sprinkle with chopped parsley for a fresh finish. Enjoy!
