Banana Walnut Cake with Vanilla Cream Glaze


Ingredients:

For the Cake:

3 ripe bananas, mashed
2 cups (250g) all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup (115g) unsalted butter, softened
3/4 cup (150g) sugar
2 large eggs
1 tsp vanilla extract
1/2 cup (120ml) plain yogurt or sour cream
1/2 cup chopped walnuts (plus extra for topping)
For the Vanilla Glaze:

1 cup (120g) powdered sugar
2–3 tbsp milk or heavy cream
1/2 tsp vanilla extract
Optional Toppings:

Fresh banana slices
Whole or chopped walnuts
Caramel drizzle
Instructions:

Prepare the Oven & Pan:
Preheat oven to 350°F (175°C). Grease and line a square baking pan or loaf pan.
Mix the Dry Ingredients:
In a bowl, combine flour, baking soda, and salt. Set aside.
Make the Batter:
Cream butter and sugar until light and fluffy.
Add eggs one at a time, mixing well.
Mix in mashed bananas, vanilla, and yogurt/sour cream.
Add dry ingredients and stir until just combined.
Fold in chopped walnuts.
Bake:
Pour the batter into the prepared pan. Bake for 45–50 minutes, or until a toothpick comes out clean. Let it cool completely.
Make the Glaze:
Whisk together powdered sugar, vanilla, and milk until smooth and pourable.
Decorate:
Pour glaze over cooled cake. Top with banana slices and extra walnuts.
