
Ingredients:
8 chicken thighs (bone-in, skin-on)
3 tbsp olive oil
5 garlic cloves, minced
1 tsp smoked paprika
1 tsp onion powder
1 tsp dried oregano
½ tsp chili powder (optional)
Salt and pepper to taste
2 tbsp chopped fresh parsley (for garnish)
Instructions:
Preheat Oven to 400°F (200°C).
Prepare Marinade:
In a small bowl, mix olive oil, garlic, paprika, onion powder, oregano, chili powder (if using), salt, and pepper.
Marinate the Chicken:
Pat the chicken dry. Rub the spice mixture all over the thighs. Let them marinate for at least 20 minutes (or overnight for deeper flavor).
Bake:
Place the chicken thighs in a baking dish, skin side up. Bake uncovered for 35–45 minutes or until skin is crispy and internal temp reaches 165°F (75°C).
Garnish:
Sprinkle with chopped fresh parsley before serving.
