Ingredients:
2 cups frozen strawberries
1 ripe banana, sliced and frozen
1/2 cup non-fat Greek yogurt
1–2 tablespoons zero-calorie sweetener (such as Stevia, Monk Fruit, or Erythritol), optional and to taste
Instructions:
1. Prepare your ingredients:
Ensure the strawberries and banana slices are fully frozen. This gives the ice cream its thick and creamy texture.
2. Blend:
In a high-speed blender or food processor, combine the frozen strawberries, frozen banana slices, and non-fat Greek yogurt. Blend until smooth and creamy. This may take a few minutes. You may need to stop and scrape down the sides of the blender or use a tamper to help it blend evenly.
3. Sweeten (optional):
Taste the mixture. If you prefer it sweeter, add 1–2 tablespoons of your favorite zero-calorie sweetener and blend again briefly to combine.
4. Serve:
Serve immediately for a soft-serve consistency, or transfer the mixture to a freezer-safe container and freeze for 1–2 hours for a firmer texture.
5. Storage (optional):
If storing longer, let the ice cream sit at room temperature for about 10–15 minutes before scooping, as it may become quite firm in the freezer.
Notes:
This recipe is Zero Points on many Weight Watchers plans, especially if fruit and non-fat Greek yogurt are considered zero-point foods for you.
You can customize this recipe by adding a splash of vanilla extract or a pinch of salt to enhance the flavor.
Enjoy
