
Ingredients:
6 oz dried beef (or thin sliced deli beef), chopped
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
Freshly ground black pepper
4 slices of thick toast (like sourdough or Texas toast)
Instructions:
Prep the beef (if salty)
If using jarred dried beef, rinse under cold water and pat dry to remove excess salt. Then slice or chop into small strips.
Make the roux
In a medium saucepan over medium heat, melt the butter. Add flour and whisk constantly for 1 minute until smooth (don’t let it brown).
Add milk
Slowly pour in the milk, whisking constantly until it thickens — about 3–5 minutes.
Add beef
Stir in the chopped beef and season generously with black pepper. Simmer 2–3 minutes.
Toast the bread
Toast thick slices of bread until golden and crispy.
Assemble
Spoon the creamy beef mixture generously over the toast. Top with more pepper or chopped parsley if desired.
