Sweet & Tangy Glazed Meatballs

Ingredients:

For the Meatballs:
• 1 lb (450g) ground beef (or a mix of beef and pork)
• 1 egg
• ½ cup breadcrumbs
• ¼ cup milk
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 1 tsp salt
• ½ tsp black pepper
• 1 tbsp chopped parsley (optional)

For the Glaze:
• ½ cup brown sugar
• ⅓ cup ketchup
• 2 tbsp soy sauce
• 2 tbsp vinegar (apple cider or white)
• 1 tsp mustard (optional)
• ½ tsp garlic powder

Instructions:

  1. Make the Meatballs:
    • Preheat oven to 375°F (190°C).
    • In a bowl, combine all meatball ingredients.
    • Mix just until combined (do not overwork).
    • Shape into 1½ inch balls and place on a greased baking sheet or in a baking dish.
  2. Bake:
    • Bake meatballs uncovered for 20–25 minutes, or until cooked through.
  3. Prepare the Glaze:
    • While baking, mix glaze ingredients in a small saucepan over medium heat.
    • Bring to a simmer and stir until slightly thickened (about 5 minutes).
  4. Combine & Serve:
    • Pour glaze over baked meatballs.
    • Return to oven for 10 more minutes or until bubbly and sticky.
    • Garnish with fresh parsley if desired.
