
Ingredients:
2 cups cooked chicken breast, shredded or chopped
1 cup cherry tomatoes, halved
½ cup crispy cooked bacon, chopped
1 cup chopped romaine or mixed greens
½ cucumber, diced
¼ cup Kalamata olives, sliced
¼ cup red onion, finely sliced
¼ cup feta cheese, crumbled
2 tbsp chopped fresh parsley
Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar or lemon juice
1 tsp Dijon mustard
1 small garlic clove, minced
Salt & black pepper to taste
Pinch of oregano
Instructions:
In a small bowl, whisk together the dressing ingredients.
In a large bowl, combine chicken, tomatoes, bacon, lettuce, cucumber, olives, red onion, feta, and parsley.
Drizzle dressing over the top and toss gently.
Serve chilled as a meal or side dish — amazing with pita or in a wrap!
