500g white fish fillets (cod, haddock, or basa)

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp paprika

1/2 tsp black pepper

1 tsp salt

1 cup cold soda water (or cold sparkling water)

Oil for deep frying

Instructions:

  1. Prepare the Fish: Pat dry the fish fillets and cut them into desired pieces.
  2. Make the Batter: In a bowl, mix flour, cornstarch, baking powder, garlic powder, paprika, black pepper, and salt. Gradually add cold soda water and whisk until you get a smooth, lump-free batter.
  3. Heat the Oil: In a deep pan, heat oil to 180°C (350°F).
  4. Coat the Fish: Dip each fish fillet into the batter, ensuring it’s fully coated.
  5. Fry the Fish: Carefully place the battered fish into the hot oil and fry for about 4-5 minutes until golden brown and crispy.
  6. Drain & Serve: Remove and place on a paper towel to drain excess oil.
  7. Garnish & Enjoy: Sprinkle fresh parsley and serve hot with lemon wedges and fries.
