
Ingredients
For the Meatloaf:
• 2 lbs (900g) ground beef (85/15 recommended)
• 1 cup breadcrumbs
• 1/2 cup milk
• 2 large eggs
• 1 small onion, finely chopped
• 2–3 garlic cloves, minced
• 2 tbsp ketchup
• 1 tbsp Worcestershire sauce
• 1 tsp salt
• 1/2 tsp black pepper
• 1 tsp dried thyme (or Italian seasoning)
• Optional: 1/2 cup grated cheese (cheddar or parmesan)
For the Topping:
• 1/4 cup ketchup
• 2 tbsp brown sugar
• 1 tsp mustard (Dijon or yellow)
For the Onion Gravy:
• 2 tbsp butter
• 1 large onion, thinly sliced
• 1 tbsp flour
• 1 1/2 cups beef broth
• 1 tsp Worcestershire sauce
• Salt & pepper to taste
• Optional: Fresh thyme or parsley for garnish

Instructions
- Prepare the Meatloaf:
• Preheat oven to 375°F (190°C).
• In a large bowl, soak breadcrumbs in milk for 5 minutes.
• Add ground beef, eggs, chopped onion, garlic, ketchup, Worcestershire, seasonings, and optional cheese.
• Mix until just combined — don’t overmix!
• Form into a loaf shape on a baking sheet or use a loaf pan. - Add the Topping:
• In a small bowl, mix ketchup, brown sugar, and mustard.
• Spread it evenly over the top of the meatloaf. - Bake:
• Bake for 45–55 minutes or until internal temp reaches 160°F (70°C).
• Let rest 10 minutes before slicing. - Make the Onion Gravy:
• While meatloaf bakes, melt butter in a skillet over medium heat.
• Add sliced onions and cook until soft and golden (10–15 mins).
• Stir in flour and cook for 1 minute.
• Gradually add beef broth and Worcestershire, stirring until thickened.
• Season to taste. - Serve:
• Slice meatloaf and pour warm onion gravy on top.
• Garnish with fresh herbs if desired.
