Beef Stir-Fry with Onions & Peppers

Ingredients:

For the beef:
• 500g beef sirloin or flank steak, thinly sliced
• 1 tbsp soy sauce
• 1 tbsp cornstarch
• 1 tsp sesame oil
• Pinch of black pepper

For the sauce:
• 3 tbsp soy sauce
• 1 tbsp oyster sauce (optional)
• 1 tbsp hoisin sauce or brown sugar
• 1 tbsp rice vinegar or lemon juice
• 2 tsp cornstarch
• 1/2 cup beef or chicken broth
• 1 tsp grated ginger
• 2 cloves garlic, minced

For the stir-fry:
• 1 medium onion, sliced
• 1 red bell pepper, sliced
• 1 green bell pepper or chili, sliced
• 2 tbsp vegetable oil
• Sesame seeds (for garnish)
• Spring onion (optional)

Instructions:
1. Marinate the beef: In a bowl, combine sliced beef with soy sauce, cornstarch, sesame oil, and pepper. Let it sit for 15–20 minutes.
2. Make the sauce: Mix all sauce ingredients in a small bowl and set aside.
3. Sear the beef: Heat 1 tbsp oil in a large skillet or wok over high heat. Sear the beef in batches until browned (about 2 minutes). Remove and set aside.
4. Stir-fry the veggies: In the same pan, add 1 tbsp oil, then sauté the onions and bell peppers for 2–3 minutes until slightly softened.
5. Combine: Return the beef to the pan. Pour in the sauce and stir everything together. Let it simmer for 2–3 minutes until the sauce thickens.
6. Garnish: Sprinkle with sesame seeds and green onions if desired. Serve hot with steamed rice or noodles.
