🐟 Baked Salmon in Foil with Asparagus & Lemon Garlic Butter
Ingredients
(Serves 2–3)
- 2–3 salmon fillets (about 500 g total)
- 1 bunch asparagus, trimmed
- 3 tablespoons butter, melted
- 3 cloves garlic, minced
- 1 lemon (½ sliced, ½ juiced)
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- ½ teaspoon paprika (optional)
- ½ teaspoon dried oregano or thyme (optional)
- Fresh parsley or dill, chopped (for garnish)
Instructions
- Preheat oven
Preheat to 200°C (400°F). - Prepare the foil
Lay a large sheet of aluminum foil on a baking tray. Lightly brush with olive oil. - Arrange vegetables
Place asparagus in the center of the foil. Drizzle with olive oil, salt, and pepper. - Add salmon
Place salmon fillets on top of the asparagus. Season with salt, pepper, and paprika. - Make the lemon garlic butter
In a small bowl, mix:
- Melted butter
- Minced garlic
- Lemon juice
- Oregano or thyme
- Assemble
Pour the butter sauce evenly over the salmon.
Top with lemon slices. - Seal the foil
Fold the foil tightly to create a packet, keeping some space inside for steam. - Bake
Bake for 15–20 minutes, depending on thickness of salmon. - Optional golden finish
Open the foil and broil (grill) for 2–3 minutes for a lightly golden top.
