Ingredients:

2 cups crushed digestive biscuits
½ cup melted butter
3 tbsp brown sugar

16 oz cream cheese, softened
¾ cup granulated sugar
½ cup sour cream
2 large eggs
2 tsp vanilla extract
2 tbsp cornstarch
For the custard layer:
1 ½ cups whole milk
⅓ cup granulated sugar
3 egg yolks
2 tbsp cornstarch
1 tsp vanilla extract
For the chocolate glaze:
½ cup heavy cream
1 cup dark chocolate, chopped
Directions:
✨ Preheat oven to 325°F (160°C). Combine crushed biscuits, butter, and sugar. Press into a springform pan. Bake for 8–10 minutes. Cool.
✨ Beat cream cheese and sugar until smooth. Add sour cream, eggs, vanilla, and cornstarch. Pour onto crust. Bake for 45 minutes or until set. Cool completely.
✨ Heat milk in a saucepan until steaming. Whisk sugar, egg yolks, and cornstarch in a bowl. Gradually add milk and cook until thickened. Add vanilla and cool.
✨ Heat cream, pour over chopped chocolate, and mix until glossy.
✨ Spread custard over cheesecake and top with chocolate glaze. Refrigerate for 6+ hours before serving.
