Greek Spaghetti Salad
Ingredients
8 oz spaghetti, cooked and cooled
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
1/2 cup Kalamata olives
1/4 cup red onion, thinly sliced
1/2 cup feta cheese, crumbled or cubed
2 tbsp fresh basil leaves, chopped
For the Dressing:
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 garlic clove, minced
1/2 tsp dried oregano
Salt and pepper to taste

Directions
1️⃣ Cook the spaghetti: Prepare spaghetti according to package instructions. Drain and rinse with cold water. Set aside.
2️⃣ Prepare the dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
3️⃣ Combine ingredients: In a large bowl, toss together the cooked spaghetti, cherry tomatoes, cucumber, olives, red onion, and basil.
4️⃣ Add the dressing: Pour the dressing over the salad and toss to combine. Add the feta cheese and gently mix.
5️⃣ Serve: Garnish with fresh basil and extra feta if desired. Serve chilled or at room temperature.
