Classic Goulash with Peppers
✅️Ingredients:
2 lbs beef stew meat, cut into chunks
2 large onions, finely chopped
3 bell peppers (red, yellow, green), sliced
3 cloves garlic, minced
2 tbsp olive oil
3 tbsp sweet paprika
1 tsp smoked paprika
2 cups beef broth
1 can (14 oz) diced tomatoes
2 tbsp tomato paste
1 tsp caraway seeds (optional)
Salt and pepper to taste
1 cup sour cream (optional, for garnish)
Fresh parsley, chopped (for garnish)
✅️Directions:
Heat olive oil in a large pot over medium heat. Add the onions and sauté until golden brown.
Stir in the garlic and cook for 1 minute until fragrant.
Add the beef chunks to the pot, seasoning with salt and pepper. Cook until the meat is browned on all sides.
Stir in the sweet paprika, smoked paprika, and caraway seeds (if using). Mix well to coat the meat and onions.
Add the bell peppers, diced tomatoes, tomato paste, and beef broth to the pot. Stir everything together.
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally to prevent sticking.
Adjust seasoning with more salt and pepper, if needed.
Serve hot with a dollop of sour cream and a sprinkle of fresh parsley, if desired. Pair with crusty bread or noodles for a hearty meal!
