Cream Cheese Pasta
Ingredients
– 8 oz (225g) pasta(such as spaghetti, fettuccine, or penne)
– 2 tablespoons unsalted butter
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 1 cup heavy cream
– 4 oz (115g) cream cheese, softened and cut into cubes
– 1/2 cup grated Parmesan cheese
– Salt and black pepper to taste
– 1/2 teaspoon dried Italian seasoning (optional)**
– 1/4 teaspoon red pepper flakes (optional)
– Fresh parsley, chopped (for garnish)
Instructions:
– Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
– In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
– Reduce the heat to low and add the heavy cream to the skillet. Stir in the cubed cream cheese until it melts and the mixture is smooth. This may take a few minutes.
– Stir in the grated Parmesan cheese until well combined and the sauce is creamy. Season with salt, black pepper, Italian seasoning, and red pepper flakes (if using).
– Add the cooked pasta to the skillet, tossing it in the creamy sauce until well coated. If the sauce is too thick, you can add a little pasta water to reach the desired consistency.
– Transfer the creamy pasta to serving plates and garnish with chopped fresh parsley.
