Crock Pot Creamy Chicken Parmesan Soup

Ingredients:

1 lb boneless, skinless chicken breasts
4 cups chicken broth
1 can (15 oz) diced tomatoes
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup cooked pasta (optional)
Fresh parsley (optional, for garnish)


Directions:

Add the chicken breasts, chicken broth, diced tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper to the Crock Pot.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.


Once the chicken is cooked through, shred it using two forks and return it to the slow cooker.
Stir in the heavy cream, Parmesan cheese, and mozzarella cheese. Continue cooking on low for another 20-30 minutes until the soup is creamy and the cheese is melted.
If desired, stir in the cooked pasta just before serving.
Garnish with fresh parsley and extra Parmesan if desired.
