Salted Honey Peanut Caramel Corn

Ingredients :

10 cups freshly popped popcorn (about 1/2 cup kernels)
1 cup salted peanuts


For the Caramel Sauce :

1/2 cup unsalted butter
1/2 cup honey
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1/2 teaspoon sea salt
For Garnish :

Flaky sea salt (optional)


Instructions :


Prep the Popcorn :

Spread the popped popcorn and peanuts evenly on a large, parchment-lined baking sheet.
Preheat the oven to 250°F (120°C).
Make the Caramel Sauce :

In a medium saucepan, melt the butter over medium heat.
Stir in the honey and brown sugar. Bring the mixture to a boil, stirring constantly, and let it bubble for 3-4 minutes without stirring.
Remove from heat and carefully stir in the baking soda, vanilla extract, and sea salt. The mixture will foam up—stir quickly but carefully.
Coat the Popcorn :

Immediately pour the caramel sauce over the popcorn and peanuts.
Toss gently to coat evenly.
Bake :

Place the baking sheet in the oven and bake for 45 minutes, stirring every 15 minutes to ensure even coating.


Cool and Garnish :

Remove from the oven and let the caramel corn cool completely.
Sprinkle with flaky sea salt for extra crunch and flavor.


Serve or Store :

Break into pieces and serve. Store leftovers in an airtight container for up to a week.
