Cinnamon Sugar French Toast Muffins
Ingredients
For the Muffins:
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
¾ cup milk
½ cup granulated sugar
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1 tablespoon maple syrup (optional)
For the Cinnamon Sugar Topping:
¼ cup unsalted butter, melted
½ cup granulated sugar
1 tablespoon ground cinnamon
Directions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
Grease a 12-cup muffin tin or line it with paper muffin liners.
2. Make the Muffin Batter:
In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
In a separate bowl, whisk together the eggs, milk, sugar, melted butter, vanilla extract, and maple syrup (if using).
Add the wet ingredients to the dry ingredients and mix until just combined. Avoid overmixing to keep the muffins light and fluffy.
3. Fill the Muffin Tin:
Divide the muffin batter evenly between the 12 muffin cups, filling each about ¾ full.
4. Prepare the Cinnamon Sugar
Topping:
In a small bowl, mix the granulated sugar and cinnamon together.
Brush the tops of the muffin batter with the melted butter, then sprinkle generously with the cinnamon-sugar mixture.
5. Bake the Muffins:
Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
6. Serve:
Serve these warm, cinnamon-sugar-coated muffins with a drizzle of maple syrup or as a delightful breakfast or snack!
