No-Bake Orange Creamsicle Cheesecake

Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 1/2 cups heavy cream
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup fresh orange juice
1 tablespoon orange zest
1 teaspoon vanilla extract
1 tablespoon gelatin (optional, for extra firmness)
1/4 cup water (if using gelatin)

Directions:

In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the base of a springform pan or pie dish. Chill in the fridge while you prepare the filling.
In a small bowl, dissolve the gelatin in 1/4 cup water (if using) and let it sit for 5 minutes. Microwave for 10 seconds to dissolve completely. Set aside.
In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy.
Add the fresh orange juice, orange zest, and vanilla extract to the cream cheese mixture. Mix until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form, then fold it gently into the orange mixture.
If using gelatin, slowly stir it into the cream mixture until fully incorporated.
Pour the orange filling over the chilled crust, smoothing the top with a spatula.
Refrigerate the cheesecake for at least 4 hours, or overnight, to let it set.
Once set, slice and serve. Optionally, garnish with extra orange zest or whipped cream.
