Creamy Chicken Marsala Pasta 🍗🍄
A rich and comforting pasta dish with tender chicken, savory mushrooms, and a luscious Marsala-inspired sauce. Perfect for a cozy dinner!
Ingredients:
1 lb pasta (shells or your favorite shape)
1 lb chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 tbsp butter
8 oz mushrooms, sliced
2 shallots, finely chopped
3 garlic cloves, minced
1 cup non-alcoholic Marsala substitute (red grape juice with a splash of apple cider vinegar or extra chicken broth)
1 cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
Salt and pepper, to taste
Instructions:
Cook the pasta:
Prepare pasta according to package directions. Drain and set aside.
Prepare the chicken & sauce:
1. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown. Remove and set aside.
2. In the same skillet, sauté shallots until softened, then add garlic and cook until fragrant.
3. Stir in mushrooms and cook until tender.
4. Pour in the Marsala substitute, scraping up any browned bits from the pan. Let it simmer and reduce slightly.
5. Add chicken broth, bring to a boil, then lower heat and let it simmer.
6. Stir in heavy cream and Parmesan cheese, allowing the sauce to thicken.
7. Return the cooked chicken to the pan, then toss everything together with the pasta until well coated.
Serve & enjoy:
Taste and adjust seasoning as needed. Garnish with extra Parmesan or fresh parsley for a pop of color.
