simple recipe for Beef and Pepper Rice Bowl

Ingredients:

  • For the Beef:
    • 1 lb (450g) beef (sirloin, flank steak, or any tender cut)
    • 1 tablespoon soy sauce
    • 1 tablespoon hoisin sauce
    • 1 tablespoon oyster sauce (optional)
    • 1 tablespoon sesame oil
    • 1 tablespoon brown sugar or honey
    • 2 garlic cloves, minced
    • 1 teaspoon ginger, grated
    • 1 tablespoon rice vinegar
  • For the Vegetables:
    • 1 red bell pepper, thinly sliced
    • 1 yellow bell pepper, thinly sliced
    • 1 onion, thinly sliced
    • 1/2 cup snow peas or green beans (optional)
  • For the Rice:
    • 2 cups cooked white rice (or brown rice, depending on preference)
    • Salt, to taste
  • Garnishes:
    • Sesame seeds (optional)
    • Green onions (chopped)
    • Fresh cilantro (optional)
    • Chili flakes (optional for spice)

Instructions:

  1. Prepare the Beef:
    • Slice the beef thinly against the grain into strips.
    • In a bowl, mix together soy sauce, hoisin sauce, sesame oil, brown sugar, minced garlic, ginger, and rice vinegar.
    • Marinate the beef in this sauce mixture for about 10-20 minutes (or up to an hour for deeper flavor).
  2. Cook the Rice:
    • Cook your rice according to the package instructions. You can use white, brown, or jasmine rice for this dish.
  3. Stir-Fry the Vegetables:
    • Heat a little oil in a large pan or wok over medium-high heat.
    • Add the sliced peppers, onions, and snow peas/green beans. Stir-fry for about 4-5 minutes, until the veggies are tender but still slightly crisp.
    • Remove them from the pan and set aside.
  4. Cook the Beef:
    • In the same pan, add a little more oil and heat it over medium-high.
    • Add the marinated beef strips to the pan in a single layer and let them sear for about 1-2 minutes on each side. Stir occasionally to cook evenly, about 4-5 minutes total.
  5. Combine Everything:
    • Add the stir-fried vegetables back to the pan with the beef and toss to combine. Cook for another minute or two to warm everything through.
  6. Assemble the Rice Bowl:
    • Place a serving of cooked rice into each bowl.
    • Spoon the beef and vegetable mixture over the rice.
  7. Garnish:
    • Top with sesame seeds, chopped green onions, cilantro, and chili flakes (optional).

Tips:

  • You can customize the veggies depending on what you have—broccoli, zucchini, or mushrooms also work well.
  • For extra flavor, try adding a splash of soy sauce and a squeeze of lime before serving.
