a simple recipe for Milk Brioche Rolls:
Ingredients:
- 3 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 teaspoon salt
- 1/2 cup whole milk, lukewarm
- 3/4 cup unsalted butter, softened
- 4 large eggs, room temperature
- 1 egg (for egg wash)
- 2 tablespoons honey (optional, for extra flavor)
Instructions:
- Activate the yeast:
- In a small bowl, combine the warm milk and sugar. Sprinkle the yeast on top, stir, and let it sit for about 5 minutes, or until the yeast becomes frothy.
- Make the dough:
- In a large bowl or the bowl of a stand mixer, combine the flour and salt. Create a well in the center, then add the yeast mixture, eggs, and softened butter.
- Mix everything together until a sticky dough forms. You can use a spoon or the dough hook attachment of a stand mixer. If you’re mixing by hand, knead the dough on a floured surface for about 10 minutes. If using a stand mixer, knead on low speed for 5-7 minutes.
- First rise:
- Once the dough is smooth and elastic, place it in a lightly oiled bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 to 1 1/2 hours, or until doubled in size.
- Shape the rolls:
- After the dough has risen, punch it down to release the air. Turn it out onto a lightly floured surface and divide it into 12 equal pieces.
- Roll each piece into a ball and place them into a greased 9×13-inch baking dish or a similar-sized pan, leaving a little space between them.
- Second rise:
- Cover the shaped rolls with a towel and let them rise again for about 30 minutes, or until they’ve puffed up and are touching each other.
- Preheat the oven:
- Preheat your oven to 350°F (175°C) while the rolls are rising.
- Egg wash:
- Whisk the remaining egg in a small bowl and brush it over the top of the rolls for a golden finish.
- Bake:
- Bake the rolls in the preheated oven for 18-22 minutes, or until golden brown on top. If you tap the top of a roll, it should sound hollow.
- Cool and serve:
- Let the rolls cool slightly before serving. They’re perfect fresh, warm, and buttery!
Enjoy your soft, pillowy milk brioche rolls!
